Bhature and Kesari Halwa

So this is the easy no yeast and egg bhature , North Indian style . You could serve it with Chole the classic combination or else with Kesari halwa .

Bhature The Yeast free version

2 cup maida ( al purpose flour )
2 tbs rava / semolina / sooji
2 tbs yogurt
1 tbs oil
1/4 tsp baking powder
1/4 tsp baking soda
1 tbs sugar
1/2 tbs salt less or more as per taste
1/2 cup Luke warm water -add by little and more if needed
Mix all to crumble and add water little by little and mix it to a nice dough . No too stretchy and not too hard , an elastic dough in between .
Make a dough add little more oil , cover with cloth or cling film and rest for 1 hrs. If you rest only the bhature will pufd up . Roll and deep fry in really hot oil .

Kesari Halwa
Rava/ Sooji / semolina – 1 cup
Water -1.5 cup
Milk -1 cup
Saffron -1 tsp (as per taste )
Cardamom-1 tsp
Turmeric -1/2 tsp
Sugar -1/2 cup
Ghee -3 tbs
To warm milk add saffron , turmeric and mix .
To a pan add the water and milk ,sugar and cardamom. Let it boil once water boils add the semolina / rava / sooji and ghee and stir well so it doesn’t come into lumps . Then once it’s cooked add little more ghee and switch off flame .
